Banana Streusel Muffins

Are you looking for a super easy muffin recipe?
Well look no farther because after some hard work of combining a few different recipes i have finally made the perfect one!!
And i promise that it will have your kids reaching for more!!
So here is what you need for my Banana Streusel Muffins!
1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon grounded cinnamon(optional)
1/2 teaspoon pumpkin pie spice(optional)
1/4 salt
1 egg, beaten
1/2 cup milk
1/4 cup oil
3/4 cup banana, mushed (about 3 bananas)

Oh, and don't forget to preheat your oven to 400*!
In a medium bowl combine flour, sugar, salt, cinnamon, and pumpkin pie spice.  Make a well in the center of the flour mixture. Like this:
Then in another bowl combine egg, milk, and oil. Add the egg mixture all at once to the floor mixture.
                                Stir until just moistened. The batter should be lumpy.
                                                             It should look like this:
           Next add the banana!!!! 
My family enjoys more banana so instead of 3 bananas i used 5 which came to about 1 1/4 cup.
To grease the muffin pan i used my trusty friend Pam!
Spoon batter into the muffin pan, filling each about two-thirds full. Like this:
Now, if you don't prefer the streusel topping then go ahead and place theses in the oven for 15-18 minutes!! But if you would like to add some extra crunch here's how!
 
In a small bowl combine:
3 tablespoons flour
3 tablespoons packed brown sugar
1/4  teaspoon ground cinnamon

  Then cut in 2 tablespoons of butter.
   You can also add chopped pecans or walnuts if you like!   
Then sprinkle the Streusel topping over the muffin batter.
 Then bake for 15-18minutes until muffins are golden brown!
Then let cool but be sure to serve them warm and with butter!!
Not only are they one of my favorites but my son Jack LOVES them too! I hope you and your family enjoy these fantastic muffins as much as we do!
