Apple Scones!

Apple Scones!
They go perfectly with a hot cup of tea!

Here is what you need:

2 1/4 cups flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter, chilled
1-3 apples(any type), peeled,cored & shredded
1/2 cup milk

In large bowl combine flour, sugar, baking powder, soda, and salt. 
Then set the bowl aside and start peeling the apples.
Once peeled you can start grading!
Be sure to put your apple aside in a bowl!

Next you will want to cut in one stick of butter until crumbly.
Then add the shredded apples and milk. 
Stir until mixture resembles a soft dough ball. 
Next you will want to sprinkle a bit of flour onto a clean surface and then place your dough on it.
Then knead 8-10 times adding more flour(if needed) as you go along. 
Next you can either pat the dough into 2-6" circles or you roll the dough out and cut into diamonds like I did!
One your dough is cut out place them on a greased cookie sheet.
Then in a small bowl mix together cinnamon and sugar..
 A sprinkle it over your scones!
Then place in a 425* oven for 15mins or until brown!
Today I used mcintosh apples but if you like more of a tart taste try using granny smith apples! 
The scones will be super yummy then!

Today's Goal:Bedroom, Kitchen & Living Room

Today i have been busy!
I was finally able to finish my room! 
Yay!!

My husband would like me to move some things around, and also put pictures on the wall. 
And I still have a few other finishing touches...
But I think things are coming along very nicely!
Because we lost our office(3rd bedroom) somethings have ended up in here!
But it's okay since we've got this really great closet...
And vanity!
I was also able to add some decorations to the Kitchen and Living Room!
I'm not to crazy about the lighting but that seems to be a pretty common problem with apartments.
And i've decided that i'd like to get a bunch of different tea pots to put on the shelf.
It's also been super nice having the microwave up high!
Kris joined in the fun by putting a few things up too!
I just love this sign! I think it's the perfect touch!

Once the Kitchen was finished i headed into the Living Room to add a few touches there!
I think the ivy turned out nice.
This wonderful sewing tin came from my Dad's step-mom! 
I LOVE it!
I had originally planned to put it in the kitchen but it ended up being too tall.
 But I think it looks super cute here!
Since i love it so much I've decided that I want to do a vintage/modern sewing theme through out the rooms!
This side of the entertainment center also turned out nice!
But i'm thinking about finding a different picture to place here so this one can go on the wall!
This is one of my favorite pictures of Jack!

I still have a lot to do through out the apartment!
 Plus multiple closets to unpack and organize.

But tomorrow i'm thinking it might be a perfect day for Apple Scones!

Stung By a Bee!

This afternoon Jackson was stung by a bee on his lip!
Poor baby looks so miserable!

I was working on a project at the breakfast bar while he was playing in the living room. 
He kept playing with the sliding glass door so I reminded him to keep it closed. Once he had closed the door I turned to focus on something when all of a sudden he was screaming! 
Come to find out a bee had gotten inside and then stung him on the lip!! 
I immediately went running to my husband(who was sleeping) and after talking to my Mom and friend Michelle we decided that the best option was to give him some med's and wait it out.
Poor guy is having trouble drinking but the med's seems to be helping with the swelling.
And now he is contently watching Go, Diego, Go while enjoying a sucker!
I just hope he will be able to eat dinner tonight. I'm thinking soup sounds good!
Please pray that he will be feeling better soon!

Snickerdoodle Cookies

This is a fantastic recipe!
 Especially if you love old fashion Snickerdoodles!

Here's what you need:


1/2 cup butter, softened
1 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon cream of tarter
1 egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon cinnamon

In mixing bowl beat the butter for 30 seconds.
Once the butter is smooth add the sugar, baking soda, and cream of tarter.
Beat until combined. Be sure to scrap the sides!
Once everything is mixed add the egg and vanilla. 
Then mix in as much of the four as you can.

Your dough should look like this once everything is mixed:

Next you'll want to refrigerate the dough for  45mins-1 hour.

Once your dough has chilled, it's time to mix together the Cinnamon & Sugar!
Now roll your dough into 1-2 inch balls.
Then roll them in the Cinnamon & Sugar mix!
Be sure to keep an eye on these because when  your not looking someone might steal one...
 Once your ready, place your cookies in a 375* oven.
Bake them for 9-10mins or until the are brown!
Be sure to enjoy your cookies with a nice hot pot of tea!

Today's Goal: Kitchen & Bathroom

Today i planned on finishing my bedroom. But my wonderful husband had other plans!
But since he will(hopefully) be gone tomorrow I'm hoping to finish it then!

So today i decided to tackle the Kitchen!
 Boy was it messy!!
Basically i finished unpacking more boxes and put items into cabinets and drawers.
Once all the other rooms are unpacked I'm hoping to hang things on walls and reorganize everything that i put away today.

But now my Kitchen is livable!
 Hopefully Kris will soon feel the need to move his computer stuff to his desk!
And of course my adorable kid found the muffins that i made earlier!
Good thing he's soo cute!!

This morning i was also able to finish the Bathroom!
It feels so great to have a few rooms that are almost normal!
