Sugar Cookies!

I LOVE Sugar Cookies!

Here is an awesome recipe that makes about 4 dozen cookies!
Feel free to half the recipe to make less or freeze some of it!

Here's what you'll need:

4 c. sugar
1 c. butter(or shortening)
3 eggs
2 c. milk
2 t. vanilla
8 c. flour
8 t. baking powder
1 t. salt

Step. 1. Cream the butter and sugar.
Then mix together: eggs, milk, and vanilla.

Step 2. In large bowl combine: flour, baking powder, and salt.

Step 3. Gradually add dry ingredients.
I usually mix in an extra 1-2 cups of flour to make sure the dough is thick enough.
This dough is awesome to freeze!
You can either roll the dough into logs using plastic wrap and tin foil.
Or you can place in a bowl(like me) and put in your freezer!

Step 4. On a flour covered surface...
roll your dough out!
Then use your favorite cookie cutters to make all kinds of different shapes!

Step 5. Place in a preheated 350* oven and bake for 8-10mins!
Once your cookies have cooled be sure to frost with your favorite frosting!
Merry Christmas!

Till Next Time,
Kate

Just a Quick Update!

Hello Hello!
Here is a quick update on whats been happening with us!

About 10 days ago our car broke down!
Yes, they one that we just got in Sept.

We had to have it towed to a shop here in Manawa where they determined that the timing belt was bad.
So they fixed it, but then something else was wrong and the guy was asking for way to much money and estimating that it would take 2 weeks to fix.
So we decided to have the car towed to our usual shop in Stevens Point(45mins away).
Thankfully they were able to figure out the problem(I guess a valve needed to be replaced) and they dropped our car off yesterday!
Plus we were able to save some money which is always a good thing!
Yay!

So on Thanksgiving Jack and Kris both had horrible colds.
Well, over the last few weeks Jack's cough has gotten worse and he's acquired a fever.
He did see our pediatrician on the 3rd for his 30month check up and everything looked good other then he had a fever of 100 and a bad cough.
But this week we decided that he needed to see the doctor since he hasn't been getting any better. And today his fever reach 102.8.

So today we saw the doctor.
 Everything is looking good!
Thankfully he dose not have pneumonia. But it looks like he has a virus.
So he's on amoxicillin  for the next 10 days.
We are hoping to see some improvement within the next 3-5 days!

I've also been working on a fantastic Custom Bag and Wallet order!!
I am crazy in LOVE with the fabric!!

Oh, and I've also been working on some scarves!
But you will have to wait until after Christmas to see pics!

I hope your having a great day!

Till Next Time,
Kate

Peppermint Pin Wheels

Hi Everyone,
Sorry that I've been MIA lately but things have been crazy around here!
Don't worry though!
Once everything is back to normal I'll be happy to share all the details with you!

Anyways, a couple of weeks ago I was looking for a Christmas cookie recipe.
And well, my wonderful mom emailed me this link for Candy Cane Cookies
They are super yummy! But of course i changed a few things!

Here's what i did!
I made the recipe just like it said!
I even separated the dough and add red food coloring to one half.
But instead of making candy canes i made Pin Wheels instead!

Step 1. Roll one half of dough flat.
Using a rolling pin roll dough to about an inch thick.

Step 2. Next crush up about 5 candy canes and mix it together with 2 TB of sugar.
Then spread the mixture over the layer of dough.

Step 3. Place the next layer of dough on top.
And roll together!

Step 4. Cut the dough!
I like to use a piece of thread.
But your welcome to use a knife.

Step 5. Place on cookie sheet!
Bake 9-10mins at 375*
Be sure to sprinkle some candy cane mixture on top!

I hope you enjoy!
They are super yummy!

Kate

Peanut Butter Balls

Peanut Butter Ball Cookies
Are beyond yummy!
They taste very similar to Peanut Butter Cups!!

So here's how you make them!

You will need:

1 1/2 c peanut butter
1/4 c butter
4 c powder sugar
1 t vanilla extract
2-4 c semi-sweet chocolate chips

1. Combine the peanut butter, butter, powder sugar and vanilla into bowl.
Mix until the dough is crumbly.

2. Melt chocolate.
There are many different ways to melt the chocolate.
I don't have a double broiler so i usually place a pot with some water on the stove.
Then place a stainless steel bowl on top of it.
Cook on med-low heat until the chocolate is nice and smooth!

3.Roll the dough into 1 inch balls. Then coat in chocolate
and place on a cookie tray with wax paper.
I was actually out of wax paper so instead i used a napkin and coated the tray with some Crisco!

4.Refrigerate tray over night(or place them in the freezer for 15mins).

Then Enjoy!
They are super yummy!!

Till Next Time,
Kate

Dutch Baby Pancakes with Caramel Sauce

Dutch Baby Pancakes is a family favorite around here!
We love it sooo much that sometimes we even have it for dinner!!
I had planned to post a recipe for No Bake Cookies but unfortunately they all disappeared before I could snap a picture of the finished product!
I hope you enjoy these AMAZING pancakes instead!!

You will need:

4 eggs
1 stick of butter
1 c flour
1 c Milk
1 t vanilla extract
1/2 t salt

1.While your oven is preheating to 425* place the stick of butter into a medium size baking dish.
Then place dish in oven!

2. Now if you have a stand up mixer USE it!
If you don't have one then you can still use a normal mixer.
Place 4 eggs into bowl. Mix on High for 2-5mins until bubbly.

3. Add flour, vanilla, salt, and milk.
Then beat on High for 8-12mins(until the butter in oven has melted).
The batter should be nice and bubbly like this:

4.Pour batter into baking dish.
Bake for 20mins until puffy and golden brown around edges.
**Side Note: The smaller the pan the thicker the pancake will be. And the pancake can puff up very high! But that usually happens with a bigger pan.**

Now if you would like to go the extra mile then you HAVE to make the Caramel Sauce!
It is Jack's favorite part!!
If not then these really do taste pretty good with maple syrup and powder sugar or with jam.

Here's what you will need for the Sauce:

1/4 c butter
1/4 c brown sugar
1/4 c light corn syrup

1. In sauce pan melt butter, brown sugar, and corn syrup on medium heat.

2. Bring sauce to boil.
Let it boil for 1min.

3. Let the sauce cool for at least 10mins.
The longer it sits the thicker it will get!

4. Enjoy your Dutch Baby Pancakes with Caramel Sauce!
And trust me, you will LOVE it!!
